I am looking for some relatively large processing trays - in the 20"x30"
sort of range. I would rather not spend $100 each for "Photo" trays if
there is something else out there that might work at a reasonable cost.
Has anyone found a supplier for such a thing? I tried a local
restaurant supply outfit and the biggest they had were 18x20.

You may have had an answer, but if not, I bought a 20x24 Cesco-Lite tray from
our local photo store for $36.95. Calumet Photo has the same thing for $34.95
plus shipping, so it comes out the same. That is the largest tray listed in
Calumet's catalog, but the camera store had a Photoquip, Inc, catalog that
listed larger ones. They have sturdy sides and a flat, textured bottom.

I am supprised that you cannot find a larger butcher tray. My wife has one for
marbleing papers that is 30 by 30, and she got it at a store going out of
business for a dollar.

No, her tray is not for sale.
