A place to start is with two old books:
_Photographic Emulsions_ E. J. Wall, (1929) Boston, the American
Photographic Book Publishing Co.

_Photographic Emulsion Technique_ 1st ed., T. Thorne Baker, (1941) Boston,
The American Photographic Book Publishing Co.
 " 2nd edition, 1948

Both have theory but were written for those who want to actually make
emulsions.

There is an extensive bibliography in:
_Modern Photographic Processing_ Grant Haist, 1979, Wiley-Interscience
Publications. Reprinted by the author, 2000, and available from the Haist
Press, P.O.Box 805, Okemos, MI, 48805 ISBN 0-471-04286-2
  See the references beginning p.93
