The emulsions of the old and new Kodak Tri-X are the same, but the film
itself isn't.
The new films are (supposed to be) better scratch resistant and should dry
better.
This results in different developing times with the same developer.
Kodak also changed the names of several films.
For instance: "Kodak Tri-X 400" has become "Kodak 400TX"

I hope this will help. Let me know what you think of it (or if you're
missing something).
BTW: I just collected this information, but didn't test/check it myself.
I use Kodak HC110 for Tri-X. For example, here's a pinhole picture:

I have a good deal of Tri-X pro 120 frozen. It seems, like Rip Van
Winkle, I missed all these changes. My question is... did Kodak
discontinue Tri-X pro (320 ASA) film? Did they alter it in any other
way?

As far as I can tell neither version of Tri-X has been changed. Kodak has
moved film production into a new plant. They took advantage of this to make
some changes in coating but the emulsions are supposed to be the same. Some
of the films, T-Max for instance, evidently have been made in the new plant
for some time so are not changed at all.
Kodak evidently decided to re-measure the development times and revise the
recommendations where necessary.
I have not tried the "new" Tri-X, either one, so can't comment directly
on their quality.
