Thanks for the langford source Peter. Have seen all the rest but that is a new one. It's amazing how few photography compendiums have casein in them. Clerc does. Nadeaus I thought was not as informative as I would have liked and if I remember he has the originator wrong. But if I also remember correctly he does mention use of cottage cheese.
One thing in all this percentage discussion we've had I forgot to mention the difference in viscosity when dissolving sodium vs ammonium. Sodium way thicker initially. But this a moot point if source is the grocery store for casein of choice:)
