Maybe someone should make an outline or synopsis of the book so people can
have an idea about the contents (and how much work that will be). Another
advantage is that people can "pick" their subjects or can suggest missing
topics. A possibility could look something like this:

chapter title 1 editor

- subject 1 author
- subject 2 author
- subject 3 author

in this way people can "claim" their subjects by filling in their name.
Each subsequent update (version) of this table of contents should have its
own number so it is clear what is the latest version. So make one chapter
something like:

Paper editor

- short history of paper Bas van Velzen
- manufacture of paper "
- chemical structure of paper "
- characteristics of paper "
- papers for gum author
- papers for platinum author

and so on. For reasons of convenience here, I stick to subjects I know
best. It looks like fun but what a lot of work.........
