Our experience with powdered albumen, whether pan dried or droplet
evaporated, and whether supplied by the food industry or a chemical supply
house, is that a significant decomposition has always taken place.

Dried egg whites mix and coat just fine, but there is always a distinct
formation of silver sulfide when the paper encounters the silver nitrate.

It is best to separate one's own eggs and give the yolks ot the dog.
