I believe the equivalent in the States is call meringue which is made from
beaten egg whites. Its been a while but I think it is still sold by most
grocery stores. If not, a restaurant food supply will carry it for certain
but the quantity might be rather large. For small quantities I used to use
fresh eggs which worked just fine.
