I'm probably stating the obvious, but temperature may be your problem. If
the emulsion is too hot, it'll sink too far into your paper, and if it's too
cool it'll go on streaky. If it cools too quickly, you'll get uneven
absorption - it'll sink in further at the end where you start coating. And
if you start by pouring a puddle of emulsion into the centre of the paper
and spread it out from there, you'll probably get a dark, round patch in the
centre of the image.

If any of the above applies, make sure you do coating in a warm room, so the
emulsion remains perfectly fluid for long enough. My solution was to do it
with the paper on a sheet of glass on top of a warm dish heater (also the
saucer containing the emulsion), which allows plenty of time for brushing-in
and smoothing before it starts to set.
