Lisa,
Hot Press is fine for gum, in fact it's the only surface I would
consider using in a watercolor paper. It has plenty of tooth to hold the
gum, in spite of its (initially) smooth surface (the surface roughens
considerably after soaking). I've tested all available papers in this
surface and they all work fine for gum. What won't work is a really
slick, plastic-like surface, although I've had no trouble printing on
plate surface bristol papers (the problem with them is that the plies
separate the second time you soak them, not that the surface won't print
well). I'm amazed that Chris was able to print gum over silver paper,
because I've just never been able to make that work, even on a matte
surface.
