I grew up on a dairy farm and my father was also the chemist for a large
dairy cooperative; his awareness of the freshness state of dairy
products was highly developed, to say the least. He often scolded my
mother for serving cream or butter that, to his nose, were no longer
fresh enough to be acceptable table fare, although they seemed just
dandy to the rest of us, and at any rate couldn't have been more than
two or three days from the cow, since with 10 hardworking people to
feed, things didn't just sit around.
Our family motto in those days: "All we have, we owe to udders."
