Benzoate is a popular bactericide in acidic food products. Its
weakness is that its effects decrease as the pH increase, and also its
not very effective against molds/fungi. I think thymol or
2-phenylphenol are generally more effective and more widely used in
photography. Another popular bactericide in photography is
isothiazolone, which is typically a 3:1 mixture of
5-chloro-2-methyl-2H-isothiazol-3-one and
2-methyl-2H-isothiazol-3-one. There are a lot more effective
bactericides but these are generally preferred because of low human
toxicity and better biodegradability than many other agents.
