Covering trays with plastic wrap is perfect to avoid oxidation or evaporation.
While developing carbon prints I also put a sheet of plexi over the warm water
tray to keep the relative humidity as low as possible in my darkroom.

My warning only was for chemicals which set free dangerous gases...
