I found that 1package of Knox gelatin contains about 7grams, and works fairly
well when mixed with 100 ml of water. This would be a 7% solution.

Hmmm ... I've made sugar syrup solutions for sweetening liqueurs since plain
granulated sugar doesn't dissolve well in alcohol solutions. Is this what you
are doing here? I don't recall that I had a problem dissolving granulated sugar
in the hot gelatin solution, but this would be an interesting way to ensure that
the sugar is completely dissolved. What are you actually doing?
