Nick ... each time you convert from one mode to another, you lose a bit of 
your file.    The Epson printer converts everything to a CMYK file when it 
prints, so that's another conversion.  However if you like the results, 
that's what counts!

You reported that you got a finer print with color inks versus using just 
black ink.  This may be because the Epson printers will print at a finer 
detail using color mode than with black ink mode.  I think they only print at 
720 dpi when using black ink only.
