Hi Sarah,
Yes, for clearing the dichromate stain in gum printing all of the
sulfites do the job. For clearing carbon prints in single transfer I
use about a 3-5% solution of any of the sulfites or metabisulfites. I
have no doubt but that this procedure would work for gum prints as
well.
