I also forgot to mention that if you are making alternative process prints, 
you will have an easier time (and less expense) hand-coating paper emulsions 
with the 5x7 format.  8x10 is over twice the area of the 5x7, but it seems 
each step up in format is accompanied by a disproportionate increase in 
difficulty in coating.
