You are obcessing too much, start with 1 sheet of film at time and give about 20% more development that you do with your Jobo Tank to start with.
Be sure to start with an alkaline pre-soak even with
1 sheet because you will need to do this when doing more than 1 sheet anyway.
Give constant even development, if you process the sheets face down make sure that tray hasa a flat bottom or a flat piece of plastic or glass laid on the bottom to prevent streaking. With multiple sheets rotate the bottom sheet to the top every 10-15 seconds. Just develop a routine method of processing your film.
Tray development is easy and a lot cheaper than a Jobo tank. And you can get even consistent developement with trays. What do you think people did before tubes? :~)
