Why is film flatness not an issue for sheet film?

The width of the light opening is 4 5/8". I thought it might be
possible to do a full scan of a 5X7 negative, or very close, because
the actual width of the 5x7 format is about 4 5/8", depending on film
holder, because the grooves that the film slides into in the holder
cuts off about 3/16" on each side.

Is this an item for the Epson 2450? If so please tell me how I can
