fill, whether using a selection or to the whole, is "command delete",
with color of choice in background, or option delete with it in the
foreground. This of course doesn't give you the choice of 50% gray as
in the menu, that has to be choosen in the color square of the tool
palette, but is very useful to get aquainted with if you aren't.
If you wish black or white, hit "command D" to bring those defaults
back to the tool palette.
Keyboard commands can make your work fly, especially while being
creative with certain aspects of the application, without the thought
of pulling down the right menu in mind or clicking the right tool,
things just go smoother. It takes time, but becomes second nature as in
most things you do continually.
