A student of mine used agar agar... it was awful. Almost no definition.
Then folks use PVA which lacks gradation, and deionized ossein (Gloy),
likewise. That's not to say other materials won't can't work, but
generally when an ingredient remains standard for 100 years there's a
reason/reasons.
