Hi Kate,
Food grade is what I use, in fact I prefer it. I tried a harder bloom
once but found it too hard and slick to print gum well in my limited
experience with it. But as I recall Chris also uses Knox, so it doesn't
seem likely that a difference in gelatin would explain the grit.
