Let's say you've photographed a scene or subject and there is a small (trace) amount of pixel information in the Red channel, but not the blue or green. If you shoot in Jpeg, this red pixel information will be lost. It is literally and permanently discarded and you cannot get it back.

When shooting Raw, the red information is retained in the file. When the file is processed through Adobe Camera Raw, it isn't discarded (it is converted to luminance information and retained). This provides usable image information, in the high values, that simply would not be there in a Jpeg file.
