As regards processed materials, I think the main reason high/fluctuating
temperature &/or humidity are to be avoided is because they accelerate
degradation due to chemical causes (oxidation from environmental
contaminants, sulphuration due to improper washing, etc.)

According to "the literature" two criteria in storing unexposed silver
gelatin material are: temperature (should be cool as possible) and change
of temperature (should be as little as possible). Probably cellar is
better on both counts -- unless attic exceptionally well insulated -- that
is if these factors affect exposed material as they do unexposed. My
guess is they would.
