I use sodium benzoate (a food preservative) in gum Arabic. Use 2,5 grams
per 100 grams of dry gum, dissolve in a bit of warm water and add this
to de-ionized water to make the volume of water required to dissolve
your gum. My prepared gum has lasted me at least 16 months without going
sour.
